Grilled Shrimp Kabobs
Ingredients:
- -1 lb peeled and deveined shrimp (tail on or tail off)
- -2 TBS Olive Oil
- -1 Fresh Lemon
Directions:
- -In a medium bowl, combine 2 TBS of Olive Oil, juice from the fresh lemon, and the seasoning packet.
- -Put peeled shrimp into the marinade and let it sit for 30 minutes (do not marinade longer than an hour)
- -Preheat grill to medium high heat.
- -Using wood or metal skewers, thread shrimp onto the skewer. If using wood, soak the wooden skewers in water for 5-10 minutes prior to putting the shrimp on so that it doesn’t burn on the grill.
- -Grill shrimp on each side for 2 to 3 minutes until shrimp is no longer opaque. Be careful not to go over 5 minutes each side as it will overcook.
- -Serve and ENJOY!
Recommendation:
- -Great with Roasted Veggies such as Asparagus or corn.
- -Great with Coconut Rice (cook rice based on directions but instead of using regular water, use Coconut Water) – You’ll love it!
