Creamed Spinach
Ingredients:
- -16 oz fresh spinach or baby spinach.
- -2 TBS unsalted butter.
- -1 white or yellow onion, diced.
- -2 TBS of minced garlic.
- -1 cup of half and half.
- -4 TBS of all purpose flour.
- -3 TBS freshly grated Parmesan Cheese.
Directions:
- -Melt the butter over medium heat in large pot. Add the flour and whisk continuously until combined for about 1 minute.
- -Add the diced onion and cook for about 2 minutes, then add the garlic and cook for an additional 30 seconds.
- -Next, add the spinach in batches (will need 3 or 4 batches), continuously stirring until it is wilted down for 2 minutes.
- -Pour in half and half and the seasoning packet and whisk continuously until it thickens which will take about 5 minutes.
- -Sprinkle on the freshly grated Parmesan Cheese.
- -Serve and ENJOY!
