Creamed Spinach

Creamed Spinach

Ingredients:

  • -16 oz fresh spinach or baby spinach.
  • -2 TBS unsalted butter.
  • -1 white or yellow onion, diced.
  • -2 TBS of minced garlic.
  • -1 cup of half and half.
  • -4 TBS of all purpose flour.
  • -3 TBS freshly grated Parmesan Cheese.

Directions:

  • -Melt the butter over medium heat in large pot. Add the flour and whisk continuously until combined for about 1 minute.
  • -Add the diced onion and cook for about 2 minutes, then add the garlic and cook for an additional 30 seconds.
  • -Next, add the spinach in batches (will need 3 or 4 batches), continuously stirring until it is wilted down for 2 minutes.
  • -Pour in half and half and the seasoning packet and whisk continuously until it thickens which will take about 5 minutes.
  • -Sprinkle on the freshly grated Parmesan Cheese.
  • -Serve and ENJOY!
