Beans and Greens
Ingredients:
- - 2 TBS Olive Oil
- - 1 Yellow or White Onion, diced
- - 2 TBS minced garlic
- - 2 bundles of fresh kale, middle rib removed and leaves torn
- - 2 15oz cans Cannellini Beans
- - 1 cup chicken stock for less broth or 3 cups chicken stock for more soupy
Directions:
- - In large dutch oven or pot, add olive oil over medium heat. Add the onion and garlic and cook for 3 minutes until fragrant
- - Add the kale and cook until it starts to cook down slightly, about 2 minutes
- - Drain the water out of the cans of Cannellini Beans and add the chicken stock, Cannellini Beans, and the seasoning packet.
- - Stir so everything is well combined. Cover and let it cook for 10 minutes
- - Serve hot. ENJOY!
