Beans and Greens

Beans and Greens

Ingredients:

  • - 2 TBS Olive Oil
  • - 1 Yellow or White Onion, diced
  • - 2 TBS minced garlic
  • - 2 bundles of fresh kale, middle rib removed and leaves torn
  • - 2 15oz cans Cannellini Beans
  • - 1 cup chicken stock for less broth or 3 cups chicken stock for more soupy

Directions:

  • - In large dutch oven or pot, add olive oil over medium heat. Add the onion and garlic and cook for 3 minutes until fragrant
  • - Add the kale and cook until it starts to cook down slightly, about 2 minutes
  • - Drain the water out of the cans of Cannellini Beans and add the chicken stock, Cannellini Beans, and the seasoning packet.
  • - Stir so everything is well combined. Cover and let it cook for 10 minutes
  • - Serve hot. ENJOY!
