Roasted Chicken Breast & Potatoes
Ingredients:
- -2 skinless, boneless chicken breasts
- -Potatoes- We recommend small potatoes (red skin potatoes, fingerling potatoes, etc.)
- -Olive Oil
- -Highly recommend to make a vegetable dish on the side.
Directions:
- -Preheat oven to 400 Degrees F
- -Remove chicken breasts and trim off any excess fat
- -Place a piece of plastic wrap over top of chicken breasts and pound until chicken breast is roughly ½ inch thick through (this makes sure it cooks evenly)
- -Cut potatoes in half lengthwise
- -On a sheet pan, cover with tin foil
- -Place a splash of olive oil on the tin foil first and coat the tin foil with oil
- -Place the chicken breasts in the middle of the pan and put the potatoes, flat side down, around the rest of the tray
- -Drizzle olive oil over the chicken and potatoes, then sprinkle 2/3 of the seasoning packet over all of the chicken and potatoes
- -Bake for 15 minutes
- -Remove from the stove, flip chicken breasts over, season the unseasoned side on the breasts with the remaining seasoning, and return to the oven for 10 more minutes
- -Remove from oven and let sit for 3 minutes to allow chicken to soak up the juices
