Meatball Foil Packets
Ingredients:
- - 1 14.5 oz can pasta sauce (pick your favorite)
- - 2 TBS minced garlic
- - 1 large egg
- - 1 LB fresh lean ground beef
- - 1/2 cup panko bread crumbs
- - 1 white or yellow onion, diced
- - 1 cup of shredded fresh mozzarella cheese
- - Additional Ingredient
- - Add 1/3 cup of Freshly Grated Parmesan Cheese
Directions:
- - Preheat grill to high heat
- - In a large mixing bowl, mix ground beef, breadcrumbs, egg, onion, and the seasoning packet together
- - Get out 2 pieces of tin foil and spray them with non-stick cooking spray.
- - Divide meat mixture into 12 individual meatballs trying to get as close to even as possible (doesn’t need to be perfect)
- - Place 6 meatballs on each piece of foil and top with ½ cup of Mozzarella cheese on each. Fold up sides of the foil and tightly wrap the meatball packets
- - Pierce foil with a fork (small hole) to vent when cooking. Place packets on the grill and cook for 15 minutes until done
- - Meanwhile, in a small cooking pot, combine garlic and pasta sauce. Heat on low heat for 8 minutes while stirring every few minutes. This should take no longer than 10 minutes.
- - Add meatballs to your favorite pasta and pour on the sauce. If adding Grated Parmesan Cheese, add it on top once everything is plated.
- - Serve and ENJOY!
