Flourless Chocolate Cake

Ingredients:

  • -2 cups chocolate chips or chopped chocolate (pick your favorite whether semi sweet or dark chocolate)
  • -3/4 cup granulated sugar
  • -1 ½ TBS Brown Sugar
  • -3 large eggs
  • -1 tsp vanilla extract
  • -1/2 cup cocoa powder
  • -1/2 cup heavy cream
  • -1/2 cup unsalted butter
  • -Additional add on’s – highly recommend fresh raspberries or creamy vanilla ice cream

Directions:

  • - Preheat oven to 375 degrees
  • - Using cooking spray, grease an 8 inch round cake pan generously
  • - In a microwave safe bowl, heat the butter and 1 cup of the chocolate chips until melted (about 1 minute)
  • - Add the sugar, vanilla extract, the eggs, brown sugar, and the seasoning packet to the butter/chocolate mixture and whisk to combine
  • - Next add the cocoa powder and whisk lightly until combined (don’t over whisk here as you want the cocoa powder to be just lightly combined)
  • - Pour the mixture into the cake pan and cook for 20 minutes until the center reaches 200 Degrees Fahrenheit
  • - Remove pan from oven. Using a butter knife, go around the edges to loosen it from the pan, and turn pan upside down to remove the cake on a cooling rack or cutting board.
  • - While cake is cooling, combine the remaining 1 cup of chocolate chips with heavy cream in a microwave safe bowl and microwave for 30 second intervals, removing and stirring each time until the chocolate is melted and everything is combined
  • - Spread the mixture over the cake, cut and serve. ENJOY
  • - HIGHLY RECOMMENDED- serve with fresh raspberries or vanilla ice cream
